Microwave cookies for two!
Recently I shared my recipe for my triple chocolate cookie dough desserts (which is baked, so just a gooey cookie), and you all LOVED it! I reckon that beauty can be made in a microwave as well, but there is quite a bit too it. There is a lot more cookie dough as well, so you would probably end up with six or so, but delicious.
I therefore decided that I should post this beauty, my microwave cookies for two recipe. I thought about whether I really wanted to try it – because I love making these so much I wanted to be selfish and keep it to myself. I realise that as I am a dessert blogger, this would make no-sense at all.. but just know that I have made this near enough 100 times myself.
Microwave
The success of these, rely on you know how good your microwave is. I have a 1000W microwave, so it doesn’t take too long to make the cookies at all. However, if you have only a 750W, the timing could be longer. It’s basically impossible for me to give exact timings for everyone who will read this blog, but one or two practice runs won’t hurt!
As you make two of these at the same time, the timing might seem quite long, but if you put two things in a microwave they naturally will take longer to cook in comparison to one. I don’t know the science behind it, but I would say in my microwave one of these would only take 45-50 seconds, but with two in there, it takes 70-90 seconds!
Vanilla or chocolate?
But anyway – these are a ‘vanilla’ cookie you could say – you could add in cocoa powder to make them more chocolate like, but I genuinely don’t think you need it. My chocolate mug cakes were chocolatey, and suitably different to these, but if you are after something with more chocolate in then definitely go for those instead!
I do tend to do this in a different bowl, and then add into the mugs because it’s a little bit more work, and I want to make sure everything is suitably mixed, which is why I didn’t bother calling this ‘mug cookies’ – but you could probably get away with it if you were careful enough! If I am feeling extra lazy, I will use my electric hand whisk to mix it as its so much quicker!
Contains egg
Unfortunately, this one recipe does have egg in it… so for those of you who can’t hack egg, or are allergic, this isn’t for you. However, my chocolate mug cakes doesn’t – so roll with that instead! All in all, its a pretty simple recipe – which I tend to weigh over ‘spoon measurements’ as peoples version of a teaspoon/tablespoon and how heaped it should be varies so much it scares me!

The weird thing about anything ‘baked’ in the microwave is that often the top of the cookie/cake doesn’t look baked. It can have a wet look, like its still raw batter, but in reality it is baked perfectly, or even over done! I always tend to test one quickly with a little scoop out – but then cover in ice cream or extra chocolate!

Ingredients
- 35 g unsalted butter
- 45 g light brown sugar
- 1 medium egg
- 1/2 tsp vanilla
- 90 g plain flour
- 50-100 g chocolate chips
Instructions

Add your butter and sugar to a bowl, and beat together!

Add the egg, flour and vanilla and beat again.

Add in the chocolate chips and mix in, and split evenly between two microwave safe mugs/ramekins!

Microwave for 70-100 seconds, and keep an eye on it!

Serve with extra chocolate, ice cream or anything!
Notes
- I use two ramekins for these – which are a decent size but it makes the cookie look ‘full’. You can use any mug that is microwave safe but the cookie doesn’t really rise so beware of that!
- You can add in 15g of cocoa powder, and use 75g of plain flour if you want them chocolate themed!
- Best eaten warm and fresh.
- The cookie make look raw a bit on top, but its always more cooked inside so make sure to check!
- In my 1000W microwave, these take 70 seconds!
