Smoked Salmon Breakfast Salad

 

Ingredients:

  • 4 cups mixed salad greens (e.g., arugula, spinach, or mixed baby greens)
  • 4 ounces smoked salmon, sliced
  • 1/2 red onion, thinly sliced
  • 1 cucumber, thinly sliced
  • 4 radishes, thinly sliced
  • 2 tablespoons capers, drained
  • 4 boiled eggs, sliced
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions:

  1. In a large salad bowl, combine the mixed salad greens, smoked salmon slices, thinly sliced red onion, cucumber slices, radishes, capers, and boiled egg slices.
