Grilled Peach and Prosciutto Morning Salad

 

Ingredients:

  • 4 peaches, ripe but firm, halved and pitted
  • 8 slices prosciutto
  • 6 cups arugula or mixed salad greens
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup balsamic glaze
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • Salt and black pepper to taste

Instructions:

  1. Preheat your grill or grill pan to medium-high heat.
  2. Lightly brush the cut sides of the peaches with olive oil to prevent sticking to the grill.
  3. Grill the peaches, cut side down, for about 2-3 minutes or until grill marks appear. Flip and grill for an additional 2-3 minutes until the peaches are slightly softened.
  4. Remove the grilled peaches from the heat and let them cool for a few minutes.
  5. While the peaches are cooling, wrap each slice of prosciutto around the peach halves.
  6. In a large salad bowl, arrange the arugula or mixed salad greens.
  7. Place the grilled peach and prosciutto bundles on top of the salad greens.
  8. Sprinkle crumbled goat cheese over the salad.
  9. In a small bowl, whisk together balsamic glaze, extra-virgin olive oil, honey, salt, and black pepper to create the dressing.
  10. Drizzle the dressing over the Grilled Peach and Prosciutto Morning Salad.
  11. Gently toss the salad to combine all the ingredients and coat them with the dressing.
  12. Serve immediately, and enjoy this delightful morning salad that combines the sweetness of grilled peaches, the saltiness of prosciutto, and the creaminess of goat cheese!
