Beetroot and Goat Cheese Morning Salad

 

Ingredients:

For the Salad:

  • 4 medium-sized beetroots, cooked, peeled, and diced
  • 4 cups mixed salad greens
  • 1/2 cup crumbled goat cheese
  • 1/4 cup walnuts, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons balsamic glaze
  • Salt and black pepper to taste

For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions:

  1. In a large salad bowl, combine the diced beetroots, mixed salad greens, crumbled goat cheese, chopped walnuts, thinly sliced red onion, and chopped mint leaves.
