Spinach and Mushroom Breakfast Bowl

 

Ingredients:

  • 2 cups fresh spinach leaves
  • 1 cup sliced mushrooms
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Red pepper flakes (optional, for added spice)
  • Toasted whole grain bread (optional, for serving)

Instructions:

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  3. Add sliced mushrooms to the skillet and cook for 3-4 minutes until they start to brown.
  4. Add fresh spinach to the skillet and sauté for an additional 2-3 minutes until wilted.
  5. Create two wells in the spinach and mushroom mixture and crack an egg into each well.
  6. Cook the eggs to your preferred doneness, covering the skillet for a few minutes if you prefer them over-easy or sunny-side-up.
  7. Season the eggs and vegetables with salt and black pepper to taste.
  8. Sprinkle grated Parmesan cheese over the entire skillet and cover for an additional 1-2 minutes until the cheese melts.
  9. If desired, sprinkle red pepper flakes for a touch of spice.
  10. Serve the Spinach and Mushroom Breakfast Bowl immediately, dividing it onto plates.
  11. Optionally, serve with toasted whole grain bread for a hearty breakfast.
