Citrus Avocado Breakfast Salad

 

Ingredients:

For the Salad:

  • 4 cups mixed salad greens (e.g., arugula, spinach, or mixed baby greens)
  • 2 medium-sized oranges, peeled and segmented
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sliced almonds, toasted
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons crumbled feta cheese (optional)

For the Citrus Vinaigrette:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions:

  1. In a large salad bowl, combine the mixed salad greens, orange segments, sliced avocado, thinly sliced red onion, toasted sliced almonds, and chopped fresh mint leaves.
  2. In a small bowl, whisk together the extra-virgin olive oil, orange juice, lemon juice, honey, salt, and black pepper to create the citrus vinaigrette.
  3. Drizzle the citrus vinaigrette over the salad ingredients.
  4. Gently toss the salad to ensure that all the ingredients are well coated with the vinaigrette.
  5. If desired, sprinkle crumbled feta cheese over the top of the salad.
  6. Serve the Citrus Avocado Breakfast Salad in individual plates or on a platter.
