Jerk Chicken & Mango Bowl Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- 4 tbsp jerk seasoning
- 2 tbsp olive oil
- 2 cups cooked brown rice
- 2 ripe mangoes, diced
- 1 red bell pepper, sliced
- 1 small red onion, thinly sliced
- 1 avocado, sliced
- 1 lime, juiced
- Fresh cilantro, for garnish
Instructions:
- Preheat grill or grill pan over medium-high heat.
- Rub chicken breasts with jerk seasoning and drizzle with olive oil.
- Grill chicken for 6-8 minutes per side, or until cooked through.
- Remove chicken from grill and let it rest for a few minutes before slicing.
- Divide cooked brown rice among 4 bowls.
- Top rice with sliced jerk chicken, diced mango, sliced red bell pepper, red onion, and avocado.
- Drizzle lime juice over the bowl and garnish with fresh cilantro.
- Serve immediately and enjoy!
