Black Bean and Corn Salad

 

 

INGREDIENTS:

1 can (15 ounces) black beans, drained and rinsed

1 cup frozen corn kernels, thawed

1/2 red onion, finely chopped

1 red bell pepper, finely chopped

1/4 cup chopped fresh cilantro

2 tablespoons extra-virgin olive oil

2 tablespoons fresh lime juice

1 garlic clove, minced

1/2 teaspoon ground cumin

Salt and pepper to taste

 

INSTRUCTIONS:

1.In a large bowl, combine black beans, corn, red onion, red bell pepper, and cilantro.

2.In a small bowl, whisk together olive oil, lime juice, garlic, cumin, salt, and pepper.

3.Pour the dressing over the salad and toss to coat.

4.Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

5.Serve chilled and enjoy!
