Creamy Summer Slaw Recipe

Ingredients:

  • 2 cups Greek yogurt
  • 1 cup low-fat buttermilk
  • 3 tablespoons honey
  • 1 teaspoon poppy seeds
  • ½ teaspoon smoked paprika
  • 2 (16 ounce) packages mixed shredded vegetables (carrots, red cabbage, and kale)

Instructions:

In a mixing bowl, combine the Greek yogurt, buttermilk, honey, poppy seeds, and smoked paprika. Whisk until the mixture is smooth and well combined.

Gently fold in the shredded vegetable mix until the vegetables are evenly coated with the creamy dressing.

Serving Suggestion: For the best flavor, refrigerate the slaw for at least an hour before serving, allowing the flavors to meld together. Serve chilled as a refreshing side dish or as a topping for sandwiches or tacos.

Notes: Experiment with different shredded vegetables or add toasted nuts for extra crunch and flavor. Adjust sweetness by adding more or less honey according to taste preference.
