Dynamite chicken and veg

Ingredients

2 pieces chicken fillet cubed

1 tablespoon garlic

1 heaped teaspoon ginger

1 teaspoon paprika

1 teaspoon salt

2 tablespoon Worcestershire sauce

1/2 tsp garlic and ginger powder

Marinate the above for 1 hour.

Batter

2 eggs beaten In a bowl

Mix the ingredients below in a bowl

1 cup flour

1/2 cup corn flour

1/4 tsp salt

1/4 tsp black pepper

Method for chicken

  • Place each chicken cube in the flour mixture, dip in egg then into flour mixture.
  • Deep fry ok meduim heat till golden .leave aside.

Sauce

1/2 cup mayo( I added plain yoghurt and mayo) reduces the heat of the sauce.

2 tablespoon Worcestershire sauce

2 tablespoon tomato sauce

2 tablespoon Maggie chillies sauce(Sirarcha sauce)

2 tablespoon jojos chilli garlic sauce

1 teaspoon honey

1 tablespoon Steers Peri Peri sauce

1 tablespoon butter

1 tablespoon oil

  • Adjust sauces according to your preference. I made extra sauce as I prefer the chicken to be drenched.

Veggies

  • Place any veg of choice in a pan, stir fry on high heat and add to the chicken. I used carrots, Broccoli,green beans,pepper and red onion chunks.

Egg Fried rice

In a pot add mix veg, pepper, veg spice, savoury rice mix, black pepper, lemon pepper and salt. Add 1/4 cup water and allow to cook over low heat do not let it dry out.

Once done add to cooked rice.

Scrambled eggs

Beat 3 eggs, add a tablespoon of milk, season with salt and black pepper.

Add to the rice, 2 tablespoon Worcestershire sauce and mix well. Place rice in a wok or big pot on high heat for 2mins.
