Easy chocolate chip pancakes that are perfect for breakfast, and pancake day!
Chocolate chip pancakes
Oh heyyyy CHOCOLATE CHIP PANCAKES! Yes, that’s right, chocolate chip pancakes. If you are after chunky American style pancakes, that are super chocolatey?! These are the beauties that you are going to want to make. They are easy, and delightful. Also, if you don’t like pancakes… what’s wrong with you?!
Just kidding. But honestly, I love pancakes. I love Crepes, I love American pancakes, and I love anything that is accidentally formed in-between. You can get so many different recipes for American Pancakes that it’s hard to know what is the best one to go for… but these are well practiced in my world, so you can trust in these.
Simple recipe
I have tried many a pancake recipe in my time, and I honestly don’t know which is technically the best. However, I like to go for recipes which are as little hassle as possible. Basically, ones which don’t involve about 10 ingredients, or folding this and whisking that etc. I like pancakes that are straight to the point.
I’ve never really seen the fuss over some recipes, but then again, if they work and taste amazing then they are technically worth it. However, a pancake is a pancake. They are meant to be something that you basically just whisk everything together, fry, and then devour.
Plain or chocolate
You can obviously use these are just a plain pancake recipe, but as I am a true chocoholic, I like to make things more interesting. You can just make chocolate pancakes, but there is something about having little pockets of melted chocolate that just swing my vote.
Top and devour!
Top these with an ice cream of your choice, and a drizzle of chocolate sauce… or even caramel sauce… and you have one of the best and most ‘food porn’ like pancake stacks. You can obviously go a little more overboard like places such as Creams Cafe so, and really make a stack out of them. Add on Kinder bars, chocolate orange segments, whipped cream, sprinkles and so on… but then that can get a little much.
As much as the ‘designer pancakes’ of the pancake stack world look incredible, I can NEVER finish them. I love a few pancakes in a stack, topped with something cold like clotted cream ice cream, and a bit of an extra drizzle, and that’s it. Don’t get me wrong, I am still partial to a lemon & sugar pancake for the true classic, but I know you will all love these too.
Practise makes perfect!
Don’t worry that if when you cook them, there is a bit of a dud one to being with. Nearly everyone has to get the heat of the pan right with a practice pancake. Sometimes the pan is too cold so it seems to take forever to cook, and other times it burns within seconds. Practice makes perfect with pancakes – and these are definitely the way to go! Enjoy! x

Ingredients
- 225 g self raising flour
- 25 g cocoa powder
- 65 g caster sugar
- Pinch of salt
- 2 medium eggs
- 350 ml whole milk
- 100-200 g chocolate chips
- Vegetable oil
Instructions

In a large bowl, whisk together your flour, sugar cocoa powder and salt.

In a separate bowl, whisk together your eggs and milk.

Add the liquid mixture to the dry mixture, and whisk until smooth.

Add in the chocolate chips and stir through.

Preheat a pan on a medium heat – and rub a little oil onto the pan.

Add some batter using a ladle, and cook on each side for 1-2 minutes or until you see bubbles coming through to the upside of the pancake.

Serve however you like – I love ice cream and a chocolate drizzle!
Notes
- Sometimes, you have to have a ‘dud’ pancake as the first one to make sure you have the temperature right on your pan – it just takes a little practice to get it right sometimes!
- The chocolate chips are optional, but are delicious.
- You can add in flavours to the pancakes if you want – such as 1tsp lemon extract, and use white chocolate chips, or orange extract and use milk chocolate chips etc!

- Serve however you like!
- Best served fresh and still warm.
