Cornflake and Malteser rocky road

I know rocky road is one of those classical things you can bake with your kids, or just make when you fancy something chocolatey, but I have always LOVED it with cornflakes and Maltesers inside. It is delicious.

The Maltesers take care of the crunchy/biscuity element for the rocky road, but the cornflakes make a nice alternative! This is something I used to make ages ago, but without the malteser’s. It was my families version of a cornflake cake (and I’m not entirely sure where the idea originated from!)

Ingredients

The mixture of chocolate, golden syrup and butter makes a dreamy chocolatey mix. It makes it softer compared to just melted chocolate which I am not a massive fan of when it comes to rocky road.The golden syrup and butter make the base for this rocky road the perfect texture otherwise its just chocolate which means its rock solid.

Cornflakes

I used honey crunch cornflakes for this particular one, but you can use plain ones as well. I just have a habit of trying to buy something I am also going to eat after the recipe, and I don’t like plain cornflakes in any way shape or form.

Traybakes

I LOVE TRAYBAKES! Whats not to love? They are simple, delicious and an amazing option for a get together with friends or even a party. Make, set, portion and devour – I will say again, what’s not to love?!

I like my pieces of rocky road nice and chunky (which you can undoubtedly tell from the pictures) and you might think OH MY GOD THEY’RE MASSIVE, but all my taste testers showed that even if you make the pieces smaller, you still go back for seconds!

Lighter treat

Sometimes I make this with just cornflakes in the middle (half the chocolate mixture too) and bung all the marshmallows on top – it makes a slightly lighter treat, but both are truly delicious! But honestly, if you like Maltesers you will LOVE this.

Everyone knows I cant resist a piece of rocky road. I also cant resist anything with Malteser included because – well hello, Maltesers are amazing! I have a recipe for Malteser tiffin if you don’t fancy the inclusion of cornflakes but still want a chocolatey malty treat. Or there is Malteser millionaires which are HEAVEN! Enjoy!

Ingredients

  • 500 g milk chocolate chopped
  • 200 g golden syrup
  • 200 g unsalted butter
  • 125 g cornflakes
  • 2 x 103g packs of Maltesers
  • 125 g mini marshmallows

Instructions

  • Line a 9×9″ square baking tray with parchment paper and leave to the side
  • Melt the golden syrup and unsalted butter gently in a pan on a low heat
  • When the unsalted butter and golden syrup have melted fully and started to bubble slightly, turn the heat off and add the chopped chocolate
  • Stir until the chocolate has melted- if it doesn’t quite melt then turn the heat back on to a very low setting so that the chocolate doesn’t split.
  • Pour the cornflakes, maltesers, and mini marshmallows into a large bowl and pour the chocolate/syrup mix on top
  • Mix the ingredients together thoroughly until its all coated well
  • Pour into the tin and press down very firmly
  • Leave to set in the fridge for 3-4 hours, or a bit longer if it still feels too soft
  • Once set, carefully remove from the tin and cut into your pieces. I do 4×4 so I get 16 large pieces, or 5×5 for slightly smaller but still delicious sized pieces
  • Dust with icing sugar or give it an extra drizzle of chocolate for show
  • ENJOY!

Notes

  • I often use either Callebaut milk chocolate or one from the supermarket own section – I find the flavour works best, but you can obviously use whatever you like.
  • This recipe will work perfectly with milk or dark chocolate, but not so much with white chocolate. The mixture of white chocolate with golden syrup, and butter can quite often split because of the sugar content and lack of cocoa solids in white chocolate. Look at my oreo rocky road if you want to use white!
  • You can easily half the recipe for less, but these are so moreish you will want the large piece! Trust me!
  • This will last for 1-2 weeks in the fridge.
