Chocolate Oreo Cookie Traybake.. Seriously What Could Be Better than some Oreo Cookie Bars?!
So I thought that maybe using some of my (what feels like) 100 packets of Oreo’s in my cupboard would be a good idea for a recipe. I recently moved house, and when it came to packing all of my ingredients up from my Mum’s house and bringing them to my new house, I nearly had a box just dedicated to Oreos.
A lovely friend of mine sent me some after her Trip to America which you can partially see in the pictures.. but if we’re being completely honest, all of those Oreos have been eaten because they are the AMAZING American flavours that you can’t necessarily buy here, and the packets are there just for photos. (If you are a blogger you’ll see where I’m coming from..)
After the successes of my M&M Cookie Bars, and Rolo Cookie Bars, I thought I would do something similar, so the Oreo Cookie Bars happened. HOWEVER… I knew that if I just did a cookie mixture, with some Oreos, it would be too dry. This meant I needed something Chocolatey! I had coincidentally been given one of the ‘Cadbury’s Big Bars’ for Christmas and it was the Oreo one, and this just seemed to ideal to miss it.
The actual Oreo part of it is different to regular Oreos, but you also have the chocolate you need in a cookie. You can easily buy Cadburys Oreo bars now, so you don’t even need the Big Bar one that I used, just the amount of chocolate, and some regular Oreos to put on top and decorate with and give it a bit more Oreo oomph.
I do have several Oreo recipes already on my blog such as my Oreo Cupcakes, Strawberry Oreo Fudge, No-Bake Oreo Cheesecake and more. I know you all love Oreos like me. Well, not all of you do, but a large percentage do! I will admit that Oreos don’t always stay as my favourite biscuit, I adore others like Custard Creams, or even the classic Digestive.. but Oreos are just more popular on the internet!
I will admit that I did gobble a lot of these up myself, no sharing… but when I made them again my Trusty Taste Testers did also enjoy them. I did make a slight error when I first made these though as because I have a brand new oven, its very very hot, and the perfect temperature it should be, but I underestimated this, and baked mine for 30 minutes (as my Rolo Cookie Bars require 25-30minutes) and forgetting that these would naturally be drier compared to lots of caramel chocolates, mine were a little overdone… perfectly delicious when microwaved though. So, the second and third times I made these, mine required about 22-23 minutes to be perfect. Therefore, keep an eye on them. The smaller the amount of time, the gooier they will be! Enjoy!

Ingredients
- 275 g Plain Flour
- 1 tsp Bicarbonate of Soda
- 1/2 tsp Salt
- 1 tbsp Cornflour
- 115 g Unsalted Butter/Stork
- 55 g Granulated Sugar
- 135 g Light Brown Sugar
- 1 Medium Egg
- 1/2 tsp Vanilla Extract
- 300 g Cadbury’s Oreo Chocolate (chopped)
- 8-10 Oreos (chopped)
Instructions

Preheat your oven to 190C/170C Fan and line a 9x9inch Square Tin with parchment paper, and leave to the side for now.

Whisk/Mix the Plain Flour, Bicarbonate, Salt and Cornflour together so its evenly distributed – leave to the side.

In a larger bowl, melt the butter. Add in the two sugars, and whisk for about 2 minutes so the sugar starts to dissolve and the mixture is smooth. Add in the Egg and the Vanilla, and whisk again briefly till smooth. (I used an electric whisk)

Add in the Dry Ingredients and chopped up Cadburys Oreo Bar and mix with a spatula till a thick cookie dough is formed.

Press the mixture into the bottom of the tin and press in the chopped Oreos onto of the traybake. Bake the traybake in the oven for 20-25 minutes, until the top of the cookie bake looks ‘dry’!

Leave the cookie bake to cool for about 10 minutes, then leave to cool fully on a wire rack. Cut the bake into 4×4 for decent sizes, or 5×5 for smaller ones! Enjoy!
Notes
- Because this traybake is essentially dryer compared to the Rolo Cookie Bars they will take less time in the oven. Also, the might look slightly underdone, but go by your instinct.
- I baked mine for 25 minutes, and they still looked slightly squishy, but because my oven is brand new its VERY hot so mine could have done with only 20 minutes!
- These delicious beings will last in an airtight container for up to 5 days, but honestly, they’ll be eaten before then.
- I’ve never personally tried this mix as an actual cookie, but if you try it out, let me know how you get on – I’d love to know if it worked!
