An easy no-bake chocolate traybake with marshmallows, digestives, and Rolos making the BEST Rolo rocky road.
Rolo rocky road
So I see lots of amazing recipes for an easy Rolo rocky road and knew I had to have a go. Honestly, I wondered why I hadn’t done this sooner! I changed a few things from the original recipe to suit my typical rocky road instead, and I LOVED it!
This recipe went down particularly well with my taste testers, it was gobbled up so much quicker than usual treats because ROLOS ARE AMAZING. Rocky road is usually a delicious treat anyway but with the addition of Rolos – this is a game changer!
Chocolate + caramel = Rolos!
Rolos are these little chocolate pockets filled with gooey caramel which just melt in your mouth and taste utterly insane! I always remember choosing a rolls of Rolos as my sweet choice when I went shopping as a child (it was always a tough choice!) but now you can get bags of ‘Little Rolos’ which are still heaven, just mini version!
My most popular recipe by far on my blog is my no-bake caramel Rolo cheesecake and I can see this one going a little crazy as well. Any Rolo themed seems to be popular on line, but I know some of you who read my blog can’t access Rolos which I find a little upsetting for you!
Chocolate
I’ve tried it several ways, but the combination of the dark and milk is a winner for me. Its entirely up to you. I used a supermarket own one when I made this, and it worked a treat. I do love using good quality chocolate, but in the run up to Christmas I’m saving my costs a bit and using cheaper, and it still tastes amazing.
You can use other caramel sweets such as Cadburys caramel, or Galaxy caramel, or anything else! I am just obsessed with Rolos as you can see from my blog with my many Rolo recipes such as my cheesecake, brownies, cookies and even my no bake Rolo tart!
Rocky road
I swap between branded and supermarket own ingredients for all different sorts of ingredients such as the chocolate, the butter, and the biscuits. Anything thats on offer and cheaper is best as long as it still tastes nice!
The great thing about rocky road is you can chop and change it up as much as you like! You can replace the Rolos, you can swap the digestives for another biscuit and you can even add in your favourite fruit – you can make it your own!
Traybakes
This traybake is obviously a bit of a sweet treat, but to be honest, I love it that way. You have chocolate, syrup and Rolo’s and more… but its worth it. The one thing I LOVE about traybakes is that you can cut the pieces into whatever size you like! You can make traybakes such as this Rolo rocky road, brownies, tiffin and even traybake cakes! They can be shared with anyone and everyone making it the perfect party piece.
No bake recipes
Everyone loves a no bake recipe – there are many options, they are simple and most importantly, they are super tasty! They don’t just stop at rocky road either, you can try my Biscoff tiffin which is just heaven in a slice, my no bake Terrys chocolate orange tart and you can even go as far as a no bake cheesecake like my lemon raspberry cheesecake – the options are endless!

Print Pin Rate
Ingredients
- 250 g milk chocolate
- 250 g dark chocolate
- 125 g golden syrup
- 125 g unsalted butter
- 100 g mini marshmallows
- 200 g digestives
- 375 g Rolos (3 bags)
Instructions

Line a 8/9″ square tin with parchment paper and leave to the side.

In a large pan, add the golden syrup and butter – melt on a low heat till combined and smooth. Add in the chocolate (chopped) off the heat, and stir until smooth.

Once its melted and combined, leave to cool for a couple of minutes.

In a large bowl, add in the marshmallows, chopped biscuits, and 2 of the bags of Rolos and mix briefly. Pour over the chocolate mix and fold together – pour into the tin and spread till its even.

With the third bag of Rolos, place them on the top and press in to decorate!

Refrigerate until set, chop up, and enjoy!
Notes
- I personally used milk and dark chocolate in this because of the sweetness. To make it less sweet, use entirely dark, or use entirely milk if you prefer.
- This lasts best in the fridge if its a hot day, or on the side if its cold. Place in an airtight container/tin for storage!
- If you have troubles with the mixture splitting in the beginning, its probably the heat thats doing it. Try and keep the heat as low as possible and be careful to not mix like crazy!
- You can easily half the recipe for less, but these are so moreish you will want the large piece! Trust me!
