This was SO good, an hour ago I couldn’t think what to have for dinner and decided I fancied a Chinese Fakeaway! This took under 30 mins for prep and cooking.
Chicken:
– 320g diced chicken breast
– Tsp rice/ white vinegar
– Tbsp soy sauce
– 1 diced onion (save half for the chips)
– 1 diced red and green pepper (save half for the chips)
– Crushed garlic cloves
– Spring onions
I added my chicken breast to a bowl with pureety at home salt n pepper marinade , I then added a Tbsp water, the soy sauce and rice vinegar and left this to marinade whilst I prepped everything else.
I then added the chicken in a large frying pan in some spray oil, left it to cook without moving too much. Then added in the peppers, onion and garlic.
For the salt and pepper seasoning:
– 1tbsp sugar
– 1tbsp sweetener
– 0.5tbsp salt
– 1tbsp chilli flakes
– 1tsp garlic powder
– 1tsp white pepper
– 1//tsp Chinese five spice.
The above makes quite a lot, so I just add this to an empty jar and save for another time!

For the chips:
I cut some potatoes and added them to my tefal uk actifry, for 25 mins.
Whilst the chips n chicken were cooking I added the rest of the veg to a wok, with a splash of soy sauce.
Once the chips were cooked I added these to the wok with a splash of soy sauce and a sprinkle of the salt n pepper marinade to make sure it was all coated! (I also added extra salt n pepper seasoning once it was plated up!).
Served with some mayflower curry sauce and broccoli.
I literally had one spoonful of the sauce, the rest was for daniel.
So I am unsure on exact calories. So calling this 400 calories for my portion.
