Berry Spinach Breakfast Salad with Almonds

 

Ingredients:

  • 6 cups fresh baby spinach
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup sliced almonds
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinaigrette dressing
  • 1 tablespoon honey
  • 1 tablespoon extra-virgin olive oil
  • Salt and black pepper to taste

Instructions:

  1. In a large salad bowl, combine the fresh baby spinach, mixed berries, sliced almonds, thinly sliced red onion, and crumbled feta cheese.
  2. In a small bowl, whisk together the balsamic vinaigrette dressing, honey, extra-virgin olive oil, salt, and black pepper to create the dressing.
