Breakfast Caprese Salad

 

Ingredients:

  • 2 large tomatoes, sliced
  • 1 cup fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic glaze
  • Salt and black pepper to taste
  • 4 large eggs, poached or fried

Instructions:

  1. Arrange the tomato slices on a serving platter, alternating them with halved fresh mozzarella balls.
  2. Tuck fresh basil leaves between the tomato and mozzarella slices.
  3. In a small bowl, whisk together the extra-virgin olive oil and balsamic glaze to create the dressing.
  4. Drizzle the dressing over the tomato and mozzarella slices.
  5. Season the Breakfast Caprese Salad with salt and black pepper according to your taste.
  6. If desired, garnish the salad with additional fresh basil leaves.
  7. Poach or fry the eggs to your desired doneness.
  8. Carefully place one poached or fried egg on top of each serving of the Caprese Salad.
  9. Optionally, drizzle a little extra balsamic glaze over the eggs for added flavor.
