Grilled Peach and Prosciutto Morning Salad
Ingredients:
- 4 peaches, ripe but firm, halved and pitted
- 8 slices prosciutto
- 6 cups arugula or mixed salad greens
- 1/2 cup goat cheese, crumbled
- 1/4 cup balsamic glaze
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon honey
- Salt and black pepper to taste
Instructions:
- Preheat your grill or grill pan to medium-high heat.
- Lightly brush the cut sides of the peaches with olive oil to prevent sticking to the grill.
- Grill the peaches, cut side down, for about 2-3 minutes or until grill marks appear. Flip and grill for an additional 2-3 minutes until the peaches are slightly softened.
- Remove the grilled peaches from the heat and let them cool for a few minutes.
- While the peaches are cooling, wrap each slice of prosciutto around the peach halves.
- In a large salad bowl, arrange the arugula or mixed salad greens.
- Place the grilled peach and prosciutto bundles on top of the salad greens.
- Sprinkle crumbled goat cheese over the salad.
- In a small bowl, whisk together balsamic glaze, extra-virgin olive oil, honey, salt, and black pepper to create the dressing.
