Marinated Cucumbers, Onions, and Tomatoes

 

Ingredients:

 

  • 3 medium cucumbers, peeled and sliced 1/4 inch thick
  • 1 medium onion, sliced and separated into rings
  • 3 medium tomatoes, cut into wedges
  • 1/2 cup vinegar
  • 1/4 cup sugar
  • 1 cup water
  • 2 teaspoons salt
  • 1 teaspoon fresh coarse ground black pepper
  • 1/4 cup oil
  • 1 teaspoon chopped fresh mint (optional)

Directions:

1. Combine all ingredients in a large bowl.

2. Toss well to mix.

3. Refrigerate at least 2 hours before serving.

 

Marinated Cucumbers, Onions, and Tomatoes Recipe:

 

Ingredients:

– 2 large cucumbers, thinly sliced
– 1 large red onion, thinly sliced
– 2 large tomatoes, diced
– 1/4 cup olive oil
– 2 tablespoons red wine vinegar
– 1 tablespoon lemon juice
– 1 teaspoon sugar
– Salt and black pepper to taste
– 2 tablespoons chopped fresh parsley (optional, for garnish)

 

Instructions:

1. In a large mixing bowl, combine the sliced cucumbers, onions, and diced tomatoes.
2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lemon juice, sugar, salt, and black pepper until well combined.
3. Pour the dressing over the cucumber, onion, and tomato mixture. Toss gently to coat all the ingredients evenly.
4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to marinate.
5. Before serving, give the salad a final toss and garnish with chopped fresh parsley if desired.
6. Serve chilled as a refreshing side dish or topping for grilled meats or sandwiches.
