Ingredients:

  • 1 cup cooked quinoa, cooled
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sliced almonds
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • Greek yogurt for serving

Instructions:

  1. In a large mixing bowl, combine the cooked and cooled quinoa with the mixed berries.
  2. Add sliced almonds and chopped fresh mint to the bowl.
