Ingredients:

  • 4 cups cubed watermelon
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh mint leaves, chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste

Instructions:

  1. In a large mixing bowl, combine the cubed watermelon, diced cucumber, thinly sliced red onion, and crumbled feta cheese.
  2. In a small bowl, whisk together the extra-virgin olive oil and balsamic vinegar to create the dressing.
