Carrot Raisin Salad
Ingredients:
- 4 ½ cups shredded carrots
- 1 (8 ounce) can crushed pineapple, undrained (Optional)
- ¾ cup raisins
- ½ cup sugar
- 2 tablespoons sugar
- ½ cup mayonnaise
- 1 ½ tablespoons freshly squeezed lemon juice

Combine carrots, pineapple with juice, raisins, sugar, mayonnaise, and lemon juice in a large bowl; mix well.
